Meet the Owners

crispy chicken in the plateCo-owner and creator of Fire Bird, Thyda Sieng, believes food is a language of its own in which it has the power to gather people of all backgrounds into a community with a common interest. Although not a professional chef, her passion for food stems from her love of cooking with her father, a retired cook. With a palette exposed to varieties of cuisines, Thyda, whose background is Cambodian, also grew a love for Southern food outside her native cuisine at a young age when her family resided in Texas but moved to California in the mid-80s. 

Thyda and Chet Sieng had their first taste of hot chicken at the famous Howlin’ Ray’s in Los Angeles and immediately fell in love with the fiery chicken that left a lasting impression on them, but especially for Thyda.

Hot chicken became an obsession for her and she wanted to spread the fire among fellow Californians who have yet to try the famous Nashville specialty fried chicken. Since not everyone could travel to Nashville nor some had the patience to wait the long hours in L.A., they started creating their own recipes and making the chicken for family gatherings, friends, parties, and the craze caught onto their peers and locals. They hope Fire Bird can continue the widespread love and frenzy of Nashville hot chicken in the community and anywhere else it will catch fire.
